Does metadata handle accent marks?
Does meta data handle accent marks for French, Spanish, Swedish, etc. For images on server that will be viewed via web.

Yes. Nuxeo metadata filled by the user and stored on the asset are stored using UTF-8 (if the database is correctly configured) and accent marks are correctly displayed.
