what is the difference between events "Document created by copy" and "Document duplicated" ?
…and when to use each of them

If you copy A into B, then documentCreatedByCopy will be sent for B, and documentDuplicated will be sent for A.
By “sent for” I mean that this document will be the source document attached to the event.
